    Sazü wines is a small-scale artisan winery producing low-intervention vegan red wines.


OUR PURPOSE IS TO CREATE AUTHENTIC RED WINES WITH A SOULFUL STRUCTURE, WHERE COMPLEXITY BREATHES, AROMAS EVOLVE, AND AGE REVEALS THEIR TRUE CHARACTER.

SAZÜ wines show a deep, intense colour with violet-purple hues at the rim. Their aromatic and flavour profile is profound, warm and long-lasting, revealing distinct yet elegant black and red berry characters, depending on the dominant grape variety in the blend. Grenache contributes notes of ripe strawberry, Syrah expresses pronounced blueberry and blackberry, while Merlot brings flavours of ripe plum and chocolate. On the nose, our Syrah is especially rich in violet, leather and subtle earthy nuances.

The foundation of a finely structured red wine lies in the oxidative integration of well-ripened tannins with a high concentration of anthocyanins. A balanced tannin–anthocyanin complex results in soft, polished tannins that support deep, expressive aromas and flavours.

We employ unconventional winemaking techniques such as the co-fermentation of different grape varieties, the use of Flexcube barrels, sur lie ageing, and délestage during fermentation. Barrel ageing lasts approximately 12 months, with particular emphasis on applying sulphur as late as possible.

Estate

Sazü estate is located at Mindszentkálla, Köves-hegy, apellation Balaton-felvidék. The vineyard is on low fertility sandy-loess soils born on volcanic basalt. The vineyard is on a south facing steep slope of more than 20 degrees in an altitude of 250 meters. The microclimate is prone to drought sub-mediterranean allowing a big ripening potential to late varieries. Grafts were planted in 2018 with special focus on the source of the grafts, the clones and the rootstocks.

SYRAH: clone 470, rootstock Ruggeri 140 or Teleki 5C depending on the soil type.

MERLOT: clone 347, rootstock Teleki 5C

GRENACHE NOIR: clone 362, rootstock Richter 110

Grenache is unique in Hungary. The variety is originated from Spain thus requires lot of sun, heat and well tolerates drought. Although in the North Balaton region predominantly white grapes are grown, we belive that our reds are well suited to this climate and represent a unique character and high quality.

Vinegrowing

Minimum intervention vineyard with no soil cultivation, cover crop and low frequency integrated pest management. Wide planting to create an airy space for bunches and leaves. Training system is Guyot with low vinestocks, which allows the bunch zone at maximum 80 cm above ground level. Above bunch zone a high leaf wall to ensure maximum photosynthetic activity. No shoot trimming, no leaf thinning. Due to the low fertility soil yields are naturally low. Bunches are hand harvested and carefully selected before crushing.


Story

Balaton, Káli-medence, Mindszentkálla, Köves-hegy.

Dávid is the vinegrower and the winemaker in one, allowing full control on all process. Since the early 2010s he managed a community supported (CSA) organicfarm near Komárom, called Cékla Klub. Later he shifted to Mindszentkálla where the estate was rebuilt, replanted and the first vintage was performed in 2021. This whole adventure started with a feeling to create something from nothing. The enthusiasm to establish a beautiful estate on a unique place, on the slopes of the ancient vulcan Köves-hegy. When we arrived here first in 2016 there were only rocks, rampant bushes and old vineyards to cut out.The complete estate was replanted with french origin grafts. It was not only a technical challenge, but often an exciting and difficult spiritual journey.
